About Junichi Mitsubori (三堀純一)
Junichi is a third generation wagashi artisan. He is one of Japan’s most recognized wagashi artisans and the founder of kadō, which he defines as a new way of wagashi, a term that echoes the meticulous care and preparation involved in sadō – way of tea. Much like a master of sadō, Junichi Mitsubori is a grand master of Ichika style, where he has turned making traditional sweets into a refined art form.
About Wagashi (和菓子：wa-gashi)
Wagashi are traditional Japanese confections. As with many of Japan’s traditional arts, each piece of wagashi is crafted with great consideration to reflect elements of nature and Japan’s four seasons. Many wagashi sweets have poetic names, as well as exaggerated, simplified or stylized designs. Wagashi are delightful and fascinating to the eye.
